How do I change the color of a contact name or address?

I want to change the color of my contact folders. When I open my contact
folders I want to see some contacts in blue, some in green, etc. I am trying
to use this as a way to further organize my contacts folder.

Categories is Outlook's built-in way to do this.  I don't believe you can
color-code contacts.
