How do I send an email to a contact that has multiple email addresses listed
under the same contact name?  Whenever I send an email, the name pops up with
the red squiggly line under it and then I can only send to one address.

You can drag/drop the contact on to the mail icon and choose "Address New
Message". A new message will open with all the contact's addresses in the To
field
