How do I globally customise 'All fields' in contacts

I am using the contacts in outlook 2003 to set up a company database.  Is it
posible to globally change fields to customise them to how we want them set
up or do we have to go into each individual contact and change each persons
fields one by one.

Sorry, but you lost me. What would each individual's custom contact fields have to do with a company database?
