Remove email address under "DISPLAY AS" in Contact

Since "Display As" currently lists: First Name, Last Name, Email address,
when I send out letters to multiple people, they can see (and use) the other
addresses shown. It should ONLY display: First Name, Last Name

It doesn't matter how you set the Display As field, the email address is
still visible to recipients unless you put the address in the BCC field.
