If I want to add someone's contact info in a text document I go into OL
(2003), open the contact, copy the name, then go to the text document, paste
the name ... go back to OL, copy the address, go tot he text doc, paste the
address ... go back to OL, copy the phone number(s), go back to text, etc.

Is there some simple way to collect all those lines and paste it in one
step?

You could try exporting your contacts to, say, an Excel file.  File menu /
Import and Export and follow the wizard.  This will export all your contacts
though.  If you don't want every single field (there are more than you think)
on the last step of the wizard click the Map Custom Fields to select the
required fields.
