change contact data field from a to b ?

Is there a utility(ies) to change an existing field's data to another
standard field in OL2003 and/or OL2000?

I have numerous user defined fields that I want to convert to standard
outlook fields to work with a 3rd party application using Outlook 2003

For instance...can I change my user defined field 'lead source' and transfer
the data to the standard field 'company' ?

The code sample at http://www.outlookcode.com/d/code/convertfields.htm shows how to copy data from built-in fields to custom fields. It shouldn't be hard for you to reverse the logic to apply the techniques to your scenario.
