How do I overide outlook 2003 so that it does not archive or keep every email
I send someone?  When I go to a contact and click on the ACTIVITIES Tab I do
not want to see anything listed. This seems like a waste of diskspace since I
often send people movie clips etc.

Outlook is not keeping these emails. You are.
Activities consumes no space whatsoever. It is a dynamic list created from
the emails and other Outlook items you have kept that are related to that
Contact.
Delete the items if you don't want Outlook to store them.
