I moved my contacts into the contacts folders of the address book but it
created 2 CONTACTS FOLDERS the default CONTACTS is empty and when I try to
open the address book I get "The address list could not be displayed. The
Contacts folder associated with this address list could not be opened.....".
Then from the dropdown I select the next Contacts folder and I get my addres
list.
How can I switch the default folder or can I eliminate the first Contact
folder (empty one) and leave only one in it?

Hi Ivan,

under "Tools/Addressbook/Tools/Options"

here you can change the default addressbook.

Change the setting for "Show this addressbook first"

Remove the invalid Contact Folder reference here:
Tools > E-mail accounts > View or change existing directories or address
books > Outlook Address Book > Change. >

Hi Russ, Ivan

If you delete an Addressbook under:
> Tools > E-mail accounts > View or change existing directories or address
> books > Outlook Address Book > Change. >

you have restart Outlook to update this setting.

Without a restart the contact folder is still available in the OAB list if
you click on the "To" field.

Right. All changes to the OAB require a restart. Always have.
