Try putting the distribution list in the BCC (Blind Carbon Copy) field

There was a way of putting the name of the distribution list in the To: filed
and all it showed was the distribution list name.  I had received email from
people with the To: field as Undisclosed receipients.  how was that done?

Outlook provides no such option natively. You can place a bogus Contact
Record there with the name of your DL, then place the DL in the BCC field.
