Mapping Fields During Import from Excel

I have an Excel database of students that I want to import into Outlook.
However, I'm trying to map fields such as MotherFirstName, FatherFirstName,
MotherCell, etc.  How can I create fields with the same names in Outlook?
(I can do it by adding user defined fields to individual contacts after the
fact, but I'd like to create default user fields.)

If these are user-defined fields, they will not import.
