People Change emails, phone numbers often. If I update a new email address, I
can no longer see old emails using the activities tab. Same goes for Journal,
I guess. So I am unaware of former exchanges we have had.

If I keep the old email as one of the three emails permitted (assuming there
is room) I have to remember  old addresses (and which) ) before sending.

To a lesser agree there is a similar problem when phone numbers change or
even names (when marrying, for example)

Is there a way to archive such info inside a field, perhaps customize them?

Outlook uses the email address to show related messages on the Activities page. If you want to continue to see those items on that page, you need to keep that address in the contact.

An alternative is to open each message, click Options, and enter the person's name in the Contacts box to make a direct link that doesn't depend on the email address.

The large notes field is where many people make their own notes about what changed when.
