I was just wondering if it was possible to do this.  I know how to export the
Contacts to Excel, but I was wondering if I could export a Global Address
List without adding every individual to my Contacts.

See "IMI GAL Exporter" - http://www.imibo.com/imidev/Exchange/imige.htm

IMI GAL Exporter for MS Exchange Server is small utility for Exchange Admin
to export GAL (Global Access List) to MS Access 2000 table.
Key Benefits
Obtain information about all the mailboxes on a MS Exchange Server 5.x
or/and  MS Exchange Server 2000/2003
User can select more of Mailbox, Distribution List, Custom Recipient
properties from any Recipient container  in Organization Tree and export it.
The add-on named "IMI Distribution List Content Exporter" is small utility
for Exchange Admin to export content of DList  (Distribution List) to MS
Access 2000 table.

Nothing to do that is built into Outlook. See http://www.slipstick.com/exs/portagal.htm
