contacts not being display as name, but still as e-mail address

when I add a contact's full name and include that name in the 'file as' and
'display as' lines of contact page, then save and close, why do e-mails from
contacts still show their e-mail address instead of their 'display as' aka
actual name in my 'from' column?

Answer would depend on where you mean and in what version of Outlook,
neither of which you posted.
If you are talking about the display of Sender's address, that is controlled
by the sender and not the recipient.
