When clicking "To:" in the New Message screen, how do I
remove all contacts that our Fax numbers, I just want to
see emails there.

A common request, but there isn't any easy way to do it.

A workaround would be to edit your Contact records and move their fax
numbers to a different phone number field like TTY or something.

found a conversion tool, but it costs bucks, any idea
where there is a free tool that will do the job?

You could write one if you're good at Visual Basic.  Otherwise you might
check the Utilities section at http://www.slipstick.com and see if they have
anything.
