How do I send an email to numerous contacts, yet NOT let their email
addresses show for everyone else to see?  Can I also set up a DISTRIBUTION
LIST to accomplish the same thing?

I don't want to use Bcc.  Is there another way?  I would like the recipients
to see in the header UNDISCLOSED RECIPIENTS instead of everyone's name/email
address.

thank you.

Use BCC.
That's what it's for.
What possible reason is there for not "wanting" to use it?

So that others who receive the email know there are others receiving the same
email, they just don't know who they are.

You can always put a dummy name in the To: field that indicates the message
is going to an entire group.
