In an open message, you right-click the name that appears on the From line,
and then click Add to Outlook Contacts, but what if you want to enter the
sender's name and email address in a different folder, other than Contacts?

Click File | Move to Folder instead of Save and Close.

What if I want to add the name of one of the other recipients to a folder
other than Contacts?

Same technique: Right-click and choose Add to Contacts, then click File | Move to Folder instead of Save and Close.
