I have my contacts organized in subfolders within the Contacts folder.
However, when I want to sent a new message and click on the 'To' or 'cc'
buttons on the relevant message dialog box lines, I can only choose the
Contacts folder itself and do NOT see the subfolders contained therein.  Is
there a workaround?  I do NOT w ant to put all my contacts directly in the
'Contacts' folder.

Right click on each of your sub-folders and select Properties.  On the
Address Book tab, enable each one as an Outlook Address Book.

unsolicited mail sent to my personal account will be deleted without

After furious head scratching, Bill Hunt asked:
