Individual Contact "Box" or screen has a "notes" section on right hand side.
What is this called?? How does it relate to "Journal" entries?? What is best
way (and where) to record notes from phone conversation with an individual
contact??

It's the body of the contact item. (All Outlook items have bodies.) It has no relationship whatsoever to any journal entries. Whether you use individual journal entries, individual appointment items, or the body of the contact to record phone notes is strictly a matter of personal preference.
