The real problem is that I am using categories and if you choose to send a
message to all the contacts in a category, if one person has to email
addresses (Email 1 and Email 2) Outlook does not capture/send to both
addresses.
Is there a way to do this?

Not a good one. You can use the Outlook Address Book instead to select your
recipients, but it won't sort by category. This is an area in which it is
better to group your Contacts by subfolder rather than by category.
