more than 3 email addresses for a contact

How do I enter more than 3 email addresses for a contact?  For example, a
contact is a client and I want to put all 7 email addresses for people at
that client.  I did it by added user-defined fields.  However, how do I get
these user defined email addresses to also go on the "send" line when I click
on the contact?  Currently, when you send a message to a contact by
right-clicking the contact, I only get the 3 email addresses from the general
contact information.

I'd rather not great multiple contacts for the same client.  I'd rather not
have to create distribution lists to group all contacts from a client.  
That's a lot of work.

I'm hoping the number of email addresses to be stored for a contact is
settable.

You don't.  The standard contacts form supports only three mail addresses.
