The default for the Address Cards view is to show the File As field as the first line of each contact entry. Maybe she change that default, in which case resetting the view should restore the earlier behavior. Or maybe she's entering the email address as the File As text.

Okay, so I checked the default view of the Address Cards and the File As
field is Last Name, First Name not only on her computer but also on all other
computer users who share her contacts list. Any other thoughts?

Open one of the contacts and see what's listed in its File As field.
