Outlook can only fire reminders for built-in fields, not custom fields. If you want a reminder, you should set a flag on the contact with a reminder date.

Thank you Sue, Can a contact have more than one flag set, and can you add
more flag types.

No, only one flag per item. I'm not sure what you're asking about flag types.
