How can I show both the work (default) phone number and the home phone number
when I open my address book?

Since the sole purpose of the address book interface is to show electronic
addresses, the only entries that the address book will show are electronic
addresses (i.e., e-mail and fax number).  Neither the business phone nor the
home phone count.

The information shown by the address book is not configurable, as far as I
can tell.
