Fax & Email name on Drop-down list

When I want to send an email to someone in my Contacts directory, I get a choice of both the "E-mail" and "Business Fax" for each listing in the window on the left of the "Select Names" menu. Is there any way to change the settings so that I only see the E-mail contact. Also is it possible to hide the "(E-Mail)" after each name?

Yes, put a letter in front of the fax phone number...
