How do I export an excell worksheet with contact details and other customized
fields to outlook?  Using the export function looses customized fields - they
don't appear in outlook.

Outlook doesn't support importing to a custom fields. You'd have to write custom code or use a third-party application. See http://www.outlookcode.com/d/customimport.htm.
