How do I get E-mail address changes in contacts to take effect?

I've tried changing an E-mail address for one of my contacts, but when I type
that contacts name, the old E-mail address is called up.

That's a separate cache of recently used addresses.  When the old one
appears as you type, select the old address and delete it.  After you have
used the new address, it will appear because it will then be cached.
