easily customizing Outlook Contacts

I need to customize Outlook Contacts (Office 2003) to include fillable fields
for the data I need to keep. I am having some difficulty doing it from
scratch and sometimes find conflicting instructions. I also read, after
almost completing a project, that the first page of Contacts should never be
edited, and this wasn't in any instructions. Are there any templates or
shortcuts/hints? Thanks for any assistance.
