How do I elliminate displaying email address of contacts in email

When I am sending emails, how do I elliminate displaying their email address
along with their name for privacy in the address? I only want to display
their name. Also in contacts, there is a "display". When I type in the name I
want without the email address, it automatically re-enters it. How do I
prevent that from automatically resetting? Thanks

Your post is too vague to permit an answer. You didn't even bother to post
what Outlook version you are using, and it matters greatly.
What you want to achieve is equally unclear. Only one of your questions can
be answered at this pint: To hide recipient names in outgoing messages use
the BCC field.
