Can you not see the Categories field in the Contact Record?

Address cards is not the most useful view - try Phone list and using the
Group By box, or use the By Category View.

Make sure the contact window is tall enough to show the Categories and Contacts controls, which appear at the very bottom.

Modify the view to add the Categories field.
