I've been typing up a contact list for my wife using Outlook 2007, and
exporting them to an excel file (version 97-2003). When I bring that file to
my wife's computer & use Outlook 2003 to do the Import, the 4th step of the
import process, "Select destination folder", there is nothing whatsoever in
that dialog for me to select. I'd expect to see her contacts folder or
SOMETHING, but there's nothing there. Help!

Don't.  Instead, create a PST file and put her contacts in there.  Then
transfer that PST (with your Outlook closed, of course), to her PC and have
her open in Outlook with FIle>Open>Outlook Data File.  She can simply copy
the contacts you included to her Contacts folder.
