The FIeld Chooser shows the email address fields under both the E-mail Fields list and the All Contact Fields list. Use the drop-down button at the top of the Field Chooser to switch.

Works for me. Change the drop-down in the Field Chooser to "E-mail fields".
The top one is "E-mail". I was able to drag it to the header and display
the mail addresses with no trouble. Now, I'm using OL 2003, but who knows
what you're using.
