I want to customise the General tab on a Contact card. It will only let me
add a new field to the All Fields tab. How do I add a new field to the
General tab?

These pages should help you get started with Outlook forms design:

http://www.outlookcode.com/d/forms.htm
http://www.outlookcode.com/d/contactform.htm
http://www.outlookcode.com/d/newdefaultform.htm

FYI, there is a newsgroup specifically for Outlook forms issues "down the hall" at microsoft.public.outlook.program_forms or, via web interface, at http://www.microsoft.com/office/community/en-us/default.mspx?dg=microsoft.public
.outlook.program_forms
