Changing the contact fields vs 2000

Im trying to merge a excel database into my contacts.  When trying to map the
fields, the fields that I would like to use aren't listed in the mapping to
destination.  How do you create, or rename fields so that I can link my
fields from excel?  I would like the actual contact card itself to list these
fields automatically as well

Outlook does not support importing to custom fields (which you can create using the Field Chooser for a table view of your contacts folder). You would need to write your own import code or use a third-party tool. See http://www.outlookcode.com/d/customimport.htm
