Why won't my .csv file import to all fields correctly?

I had to edit my new bosses contacts, so I exported them to an excel file,
burned it to a cd, then did all the editing on my own computer.  With the
help of our company user support I figured out that the re-importation of the
contacts (which I'm doing to my own contacts folder since I have none there
yet) needs to be in a .csv file format.  However, not all fields are
importing - most importantly all email information is missing.  What can I do
to import the complete .csv file, rather than just the main name, company,
address and phone information?

Will I have to edit directly on Outlook, or is this possible?

Why not just take your boss's contacts exactly as they are stored in Outlook
and edit them that way?  No importing/exorting and losing of data.  Are you
using an Exchange mailbox or a PST?
