Are you sure that you have chosen to have OL 2007 keep track of activities?
Go to Tools --> Options and under the Preferences tab you will see Contacts
and Notes. Click on Journal Options and you can select what you want OL to
record and for which contacts. Make your selections and then click ok. Now it
should be automatically recording the activities for you.

ShineCC,
Your comments are well taken but they apply for displaying linked Contact
activities within the Outlook Journal. What I am seeking is the automatic
display of all linked activities within each individual Outlook Contact
record. This has been erratic behavior that sometimes displays some activity
items, sometimes displays all activity items, and sometimes displays zero
activity items. I do not believe there are any settings to be manipulated
for this. This convenient feature worked flawlessly in previously released
versions of Outlook and that is why I am suspecting a possible bug with OL
2007.
Any MS MVP insights here from anyone?

I am also having this same problem. Did you ever find a solution to this?
