How can I add a contact from a forwarded email message to my Outlook contacts?

Right-click the address in the recipient field and choose Add to Contacts.

Do you mean that the contact is in the BODY of the message?  If so, then
unless the address is a completely specified address and not just a friendly
name, copy/paste works.  Otherwise, no, because the information was stripped
by the sender.
