In Outlook2007, is there a way to look at all my contacts and select (check
mark) those I want to send a certain email to, so they are all added to my
"to" line at the same time? I only seem to be able to add names I can think
of in my head or search them one by one....

Same as always. Select the Contacts in your Contacts Folder > Actions >
Create > New Message to Contact

and another way ..

Ctrl Click each Contact you want to email, then grab and drag them to the
Outbox (or any email folder).

If you view in a table view, this becomes a very powerful way to select who
you email.  You can Group By Category for example and email an entire
Category easilly.
