In an open email message, when I right-click on the sender's email address
and choose the 'Add to contacts', can I change the default folder that it
saves to? I realize I can drag-and-drop to my contacts folder of choice --
I'm just trying to take advantage of a simpler feature.

Not that I'm aware of.

When you select Add to Contacts, you will get a new Contact window. Instead
of choosing Save and Close, click File>Move to Folder and specify the
Contacts folder where you want it.
