umm. Let's see, I am using Outlook 2007, an email comes in to the Inbox. It
is from someone that is in my contacts, I want to somehow attach/connect it
to that persons record. So that if I look at that contacts record I can see
the email that came in (or any others for that contact).
That's the best I can do.

You don't need to. Open up the Contact, and in the Show box on the ribbon,
click on Activities. That will automatically generate ALL activity that has
happened with that Contact.
