How to turn Journal ON for new contacts in Outlook 2007

I just got Outlook 2007 (Office 2007), running in XP. I'm trying to get my
records more organized and learning what Journal is and how it works (as an
aside, a pointer to any good primers or learning tools would be great).

When I go in Outlook Tools > Options > Preferences > Journal Options, under
"For these contacts," all of my new contacts are unchecked, which I'm
assuming means that Journaling is turned off for that contact.

How do I set Journal ON by default for new contacts? I couldn't find an
answer anywhere.
