sending emails - contacts used to appear as nicknames now don't

when addding a contacts in outlook there is a line which says "display as" eg
"ros" .  This was happening for about a year but now my new emails all show
the nickmane follwed by full emails address eg phil>psmith@bigpond.net.au.
How do I stop it doing this

By default, current versons of Outlook create Display As fields composed of
"First Last (email)".  You can't change the default, but once it is there
you can change it to suit you.  Just enter what you want to see.
