I am trying to keep a contact's salutation in Outlook.  How and where can I
do this so that I can use this stored salutation in a mail merge of my
contacts?

Assuming that you are referring to a salutation that differs from any
combination of elements of the person's fullname (Title, FirstName,
MiddleName, LastName, Suffix) and/or you wish to have different types of
salutations for various individuals (i.e. "Dear Sir" vs "Dear Mr. X" etc) -
the simplest way would be to use one of the 4 <User> fields in the contact
record (fieldnames = User1, User2, User3, User4) to store the specific
salutation for each contact which can then be used in your mailmerge.
