How do I organize contacts?

When you type in a new contact it gives you a couple different options on how
to file the name (first, last - company name, last). Is there a way to reset
all names to last name, first name? I have some contacts that even though I
tell it to file under "C" it still stays at the front of my contacts by my
distribution lists.

You must code to reset this value for existing Contacts.
