how do i create a column that will show the date of my last contact with a
customer whether it's by phone, email or in person?

If you view the COntacts folder in Phone List view (or any other Tbale view)
you can use the Field Chooser to make a New field. The Field chooser can be
found on the Advanced Toolbar. It has a New button on it. Make a Date field,
then drag it onto the table (eg beside the Company field header). You may
also want to turn on Enable Inline Editing.
