The Address Book service will always include contacts that have electronic
addresses. Fax numbers are electronic address, so the Address Book view
will always include them, if found. If you change the number so that
Outlook cannot recognize it as a fax (for example, by prefixing it with the
letter "F"), then it won't appear in the Address Book interface.

Thanks, Brian, for your prompt response. I then need a way to create a batch
run on changing all fax no. field. Is there any simplified option to do so?

You'll need a third-party tool to do the job. One of them can be found
