Auto Fill-in of Contacts Box in Outlook 2000

I am using Outlook 2000 in Windows 98 OSR2 and for some
reason when I send an email to client, the contacts box at
the bottom of the email is filled in with some other
contact's name.  I don't want other clients seeing who I
email the message to.  How do I fix this?
