Configuring contact in Outlook 2000

I would like to know how I can add contacts manually and
add the email addresses so that when the email is sent,
the To: field shows the contacts name, not their email
address.

When I add a contact from an incoming email it dispays the
persons name. I guess this is called resolving the email
address. I am sending to a group and don't want all of the
individual email address displayed as the message gets
forwarded over the Internet.

How should I be adding contacts? I don't use the Address
Book, just the contacts folder.   Thanks
