Okay, this is probably a stupid question, but how does one
have a contact for Jane and John Doe, email for
jane@abc.com, email for johnd@otmail.com, and when I
select jane@abc.com the name appears Jane & Jon Doe...

What to do?

Answer depends on your Outlook version and how you have the Contact Record
set up. In some versions, Outlook will resolve a recognized address to the
familiar name (Display Name). I suspect that both addresses resolve to that
familiar name.
