i created new fields for my contacts (i.e. mobile phone 2
or other phone 2) - how do i make these new fields a
selection in the drop down menu when i'm creating or
updating a contact?

You can't change the phone list drop-down. The new fields are available on
the All Fields tab. Or you could customize the form to add them as separate
text boxes.
