Custom Search Fields

Is it possible that when opening a new message, click to:, then the
find button to setup some sort of custom search fields that one can
search through ones contacts, etc.  Is it possible to setup any sort
of custom search fields period?  Thanks for the help in advance.

If the custom fields are in the folder and not only in the items you
can use Advanced Find for that and you can even save your customized
search for later reuse. Find itself is very limited in what fields it
can search.
